Combine the Cajun seasoning and breadcrumbs together in a

Spray thawed chik'n pieces with a little bit of Pam and toss in bowl to coat with seasoning.
In a large skillet over medium heat, saute chik'n pieces in butter until heated through, about 2-3 minutes.
Reduce heat and add green onion, heavy cream, sun dried tomatoes, basil, salt, garlic powder, black pepper and heat through until sauce slightly thickens. If the sauce gets too thick you can just add more milk and stir.
Pour over hot pasta and toss,with Parmesan cheese.
Whisk together first 5 ingredients; set aside.
Toss together lettuce, tomatoes and onion. Divide between 2 plates.
Liberally coat chicken breast with Cajun seasoning.
Heat 1 tablespoon vegetable oil over medium-high heat; add chicken and fry until cooked through and crusty, about 4 minutes per side.
Transfer cooked chicken to plate and cut into crosswise thin strips.
Arrange chicken atop salad.
Spoon dressing over and serve.

Combine flour and cajun seasoning in a ziploc bag and toss.
Deep fry for 30/40 seconds.
VINAIGRETTE:
In a food processor, process everything except the oil.
Slowly drizzle in the oil until emulsified.
Add chopped coriander.
Place into a bowl for 30mins for the flavours to develop.
Serve on the side or drizzle some of the vinaigrette over the calamari.
Slice each chicken breast in half crosswise. Cut each slice in half diagonally. Sprinkle with Cajun seasoning. Spray with no stick cooking spray.
Preheat the grill to medium-high. Spray corn with no stick cooking spray. Grill corn for 8 mins, turning frequently, until tender. Grill chicken for 2-3 mins each side, until cooked through.
Remove kernels from corn. Mix with tomato, cucumber, oil and lemon juice in large bowl. Season. Serve chicken with corn salsa and cilantro.
Combine flour and Cajun seasoning. Dredge patties in seasoned flour, shaking off excess. Set aside.
Heat oil in a large nonstick frying pan. Add patties and cook until browned on both sides and cooked through.

Cut jalapenos in half lengthwise; remove seeds and center membranes. In a small mixing bowl, combine the cream cheese, cheddar cheese and Cajun seasoning. Stuff about 1 1/2 teaspoonfuls into each pepper half. Cut bacon strips in half widthwise. In a large skillet cook bacon until partially cooked. Wrap a bacon piece around each pepper; secure with a toothpick.
Place on a wire rack in a shallow baking pan. bake uncovered at 350 for 25-30 minutes or until bacon is crisp. Discard the toothpicks and serve immediately.
