Combine pumpkin, coconut milk, date sugar, protein powder, coconut oil, vanilla extract, flaxseed meal, 1 tablespoon pumpkin pie spice, stevia extract, and salt in a high-powdered blender; blend until smooth and creamy. Pour over crust.
Refrigerate until pumpkin filling firms up, about 1 hour.
Grease casserole dish.
Season with salt and pepper as you fill dish with the following, in order:
a layer of raw, sliced potatoes, a layer of raw rice, a layer of raw onions, a layer of raw ground beef (crumbled up).
Cover all with about a pint of canned tomatoes.
Bake at 375\u00b0 for about 1 1/2 hours, or until done.
In 1 1/2 quart casserole, put diced raw potatoes to cover the bottom, raw rice, browned ground beef, chopped onion and enough diced carrots to cover.
Place in order given.
Pour tomato juice over all until all is covered.
Salt each layer.
Bake at 350\u00b0 for 2 1/2 hours.
