Bring chicken broth to a boil (Rachael Ray used beef broth).
Add frozen cauliflower.
Boil for about 8-10 minutes.
Drain -- in case there is too much liquid -- Add cheeses, butter and more broth if it is too thin for your taste.
Smash with a masher. Should be the consistency of mashed potatoes.-- yum!

Rachael Ray'S Meatza Pizza Burgers

Combine ground beef, tomato paste, chorizo or pepperoni, oregano, garlic, and pepper. Form into 4 patties.
Now it's time to cook the burgers. Ray's directions are for grilling: cook burgers for 5 minutes on each side over medium-high gas heat or charcoal. But I bet you can just pan fry them or pop them on an indoor grill.
In the last minute, melt a slice of provolone on each burger. Serve with romaine lettuce and slice tomato on crusty rolls.

Sweet Baby Ray'S Crockpot Chicken

Mix BBQ sauce with vinegar, red pepper flakes, brown sugar and garlic powder.
Place chicken in crockpot (still frozen is ok). Pour sauce mixture over chicken.
Cook on LOW 4-6 hours.

Ray'S Chili Delight Dip

Spread Philly cheese in the bottom of 1 square baking dish; pour can of chili over top and sprinkle the Monterey cheese over top.
Bake at 350\u00b0 until cheese on top is melted.
Serve hot with tostado chips and dip chips in mixture.

Sweet Baby Ray'S Crock Pot Barbecue Chicken

Mix all ingredients except chicken.
Put chicken in the crock pot and pour sauce mixture over it. (I usually save some sauce to drizzle over the chicken when I serve it).
Cook on low for 4-6 hours.

Sweet Baby Ray'S Bbq Butter

Blend all ingredients together in a mixing bowl.

Ray'S Original Stuffed Mushrooms

Cut out stems in mushrooms; chop finely.
Put aside.
Brown sausage and crumble.
Drain well.
Add to sausage mushrooms stems, garlic, basil, Dale's steak sauce and bread crumbs.
Mix together well.
Put a little butter and steak sauce in mushrooms, then stuff with sausage mixture.
Bake at 375\u00b0 for about 15 to 20 minutes. Regulate ingredients to your taste.

Rachel Ray'S Ratatouille

Preheat oven to 425 degrees.
Place large skillet over med-high heat.
Add 2 T. olive oil.
Add onions, garlic, and peppers and cook till onions are tender, about 4-5 minutes.
Place contents of skillet in food processor and add the tomato sauce. Puree and season with salt and pepper.
Place in large casserole dish and swirl to cover bottom of dish.
Layer vegetables in a swirl pattern on top of sauce.
Sprinkle with salt, pepper, and thyme leaves.

Caramelized Onion Rice

Heat extra virgin olive oil in a pot on medium/high heat. Add diced onions and stir. Cover and let them cook for 1-2 minutes, stir, and cover and let them cook for another 1-2 minutes, just until they turn brown.
Add rice, garlic oil, basil oil, and salt and pepper and stir until well combined.
Add chicken broth, stir, bring to a boil (should be fairly quick), cover, turn down to low and let simmer for 15 minutes.
Turn burner off and let rest for 5-10 minutes without taking the lid off. When done, stir/fluff and serve.

Rachel Ray'S Pasta A La Vodka

Place a large pot of salted water on high heat.
While waiting for water to boil, place a large pan on medium heat. Add oil, butter, garlic and onions to pan and gently saute for about four minutes. Add vodka to the pan a simmer for about 3 minutes to reduce by half. Add tomatoes and chicken stock, bring to a low boil. Reduce heat and simmer. Season with salt and pepper.
