Heat oil to medium temperature. Place all ingredients in oil except sugar. Cook on medium temperature for 2 1/2 to 3 1/2 hours.
Take sugar and caramelize in small pan over medium heat almost to burn.
Turn meat mixture heat to high and add caramelized sugar, stir and cook for an additional 15 minutes.
Drain meat thoroughly.
Serve with pico de gallo salsa, fresh homemade tortillas, frijoles and margaritas.

Place strawberry halves, apple juice, maple syrup and vanilla in blender or food processor.
Cover and blend until smooth.
Cover and refrigerate.
Prepare crepes.
Spread 2 T.
cheese over each crepe.
Sprinkle 1 T.
chopped strawberries over cheese.
Fold each crepe in half, then into thirds to form a triangle.
Spoon strawberry sauce over crepes.
Sprinkle with powdered sugar if desired.
You will also need sequins, for decorating the eyes.

Place potatoes in boiling water to cover and cook for 20 to 25 minutes over medium heat, until tender.
Drain and discard water. Put roasted, peeled chilies and garlic in food processor for 15 to 20 seconds, until minced.
Add potatoes, milk, paprika, salt and cayenne pepper.
Process until smooth.
Sprinkle with chives or parsley.

Brown ground beef in large saucepan.
Add onions and garlic; saute until onions are soft.
Add cream cheese; cook, stirring constantly, until cream cheese is melted.
Add corn and Rotel; cook until the mixture is heated through.
At this point I did add some Asadero cheese (a soft Mexican cheese, good for melting - Monterey Jack would probably work if you can't find the Asadero) to the mixture and let it melt.
Serve over mashed potatoes or Mexican rice.
Top with Asadero cheese and let melt (I microwaved mine to melt the cheese).

Slice squash lengthwise.
Scoop out center.
Add enchilada sauce, combined with the water in large shallow pan.
Skin side down, cover and steam at 325\u00b0 for 30 minutes.
Saute bacon 4 to 5 minutes.
Add bell pepper, onion, mushrooms and garlic.
Cook until onions are clear.
Remove from heat; add corn, olives, rice, chili salsa or other Mexican sauce.
Add eggs, salt and pepper; mix together.
Scoop into squash; top with cheese.
Cover.
Bake 30 to 40 minutes at 325\u00b0.

Place first 10 ingredients in the crock pot along with garlic.
Cook on low for approx 6 hours.
Remove beef and shred.
Put back in the crock pot and mix with other ingredients.
Let cook for about a hour.
Serve meat with warm flour tortillas, salsa, and cheese.
You may also want to include sour cream, tomatoes, etc.
Place a single layer of steak in a shallow casserole dish. Sprinkle a portion of lime juice, sazon, and adobo seasoning. Top with chopped onion pieces. Repeat layers until all pieces of steak are seasoned. Pour beer over the mixture. Cover and refrigerate for 1 to 24 hours.
Preheat a grill to medium-high. Discard marinade. Grill steak until lightly charred on the outside but still slightly tender in the center for medium doneness, 6 to 7 minutes per side.
Preheat oven to 375 degrees F (175 degrees C). Grease and flour one 9 or 10 inch Bundt pan.

Take corn cobs.
Break into small pieces.
Add 2 quarts of water and simmer in a covered pan for 10 minutes.
Strain into a large saucepan; add 4 cups of the strained water and sugar.
Bring to a boil over high heat.
Stir in Sure-Jell.
Bring to a full rolling boil and cook for 1 minute, stirring constantly.
Remove from heat and add a few drops of food coloring for desired color. Skim off foam; pour into sterilized jars and seal.

Put 1 cup milk in a bowl, add Dream Whip and vanilla.
