Cook until it forms a soft ball in cold water.
Stir often to keep from scorching.
Add vanilla, cinnamon and pecans.
Beat until almost cold.
Drop by spoonfuls onto waxed paper.
Start pouring pralines, while beating, before mixture gets too firm.
I always double this recipe, because they're gone before I finish if I don't!
Double recipe makes 40 pralines.
Stir milk gradually into egg yolks.
Add sugar and salt; cook in the top of a double boiler until mixture coats the spoon.
Chill thoroughly.
Whip cream to very soft peaks (it won't quite hold its shape).
Add pralines, vanilla and whipped cream.
Freeze either in an ice cream maker or in the freezer (if using your freezer, stir twice during freezing to prevent large ice crystals from forming).
Heat oil in a frying pan. Add the bacon, onion, garlic plus parsley & saute until onion is soft & golden brown.
Add the beans, salt to taste preference & Creole seasoning. Reduce heat to low & cook gently for about 30 min or until beans are soft (Add a sml amt of water if needed to keep the beans from sticking to the bottom of the pan.
HINT: Try pairing these beans w/my also newly entered Creole Meatloaf recipe & your favorite thick mashed potatoes. Yum!

Remove from heat and add vanilla. Beat until creamy consistency; drop quickly on waxed paper.

Line a cookie sheet with waxed paper.
In a heavy, 2-quart saucepan, combine sugar, milk, butter and salt.
Cook over low heat, stirring constantly until mixture comes to a boil.
Add pecans.
Cook over low heat to soft ball stage (234\u00b0 on candy thermometer), stirring occasionally; remove from heat.
Add vanilla and beat until candy begins to lose its gloss and pecans are coated.
Drop by teaspoonfuls on cookie sheet.
Cook until set.
Store in a tightly covered container up to 2 weeks.
Makes 36 pieces.
Combine the first 4 ingredients.

Remove from heat and add margarine and vanilla.
Beat well and add pecans.
Spoon onto wax paper.
Mix evaporated milk and sugar and cook until mixture will form a soft ball when dropped in cold water.
Add butter and vanilla. Remove from heat and beat until cool.
Add the pecans and crop on greased cookie sheet immediately.
Allow to cool completely.
