Grind the lamb, fat from the lamb kidney (do not add the kidney) and garlic
Cut all fat from meat, and brown in Dutch oven with the butter. Turn meat to all sides to brown.
Remove from pot and saute cut up onions.
Remove onions and return lamb to pot.
Sprinkle the onions over the meat, add pepper, salt and caraway seed.
Cover and simmer until meat can be pierced with fork.
This will take about 2 hours on a low flame, or according to weight of meat.

Melt butter in medium stockpot, saute scallions & parsley until parsley turns dark green and fragrant.
Add the cubed lamb & saute until lamb is just lightly browned.
Add broth, lemon juice and coriander. Stir well, reduce heat and cover & simmer about 1 hr 15 minutes.
Stir in the kidney beans, salt & pepper. Cover and simmer just until heated through.
Serve over rice, if desired.
