Heat 2 tbsp butter in a saucepan, add the onion and saute for 2-3 mins. Add the mushrooms and continue to cook for 4-5 mins, stirring. Season then sprinkle with flour and cook briefly.
Gradually stir in the vegetable stock and cream and continue to simmer, stirring, until the sauce thickens. Stir in the cream cheese.
Slice the bread into triangles. Heat 1 tbsp butter in a frying pan, add the bread and fry for 2-3 mins on each side.
Divide the soup between 4 bowls and sprinkle with parsley leaves. Serve with the fried bread triangles.

Grease a 9 inches round pan and coat greased bottom and sides with some flour or breadcrumb.
Pour mixture in prepared pan and bake in preheated oven (175\u00b0C - 350\u00b0F) for about 45 minutes.
Serve cold.
