Cream Of Mushroom Soup With Fried Bread Triangles - cooking recipe

Ingredients
    3 tbsp butter
    1 None onion, diced
    1 lb mushrooms, thinly sliced
    1/3 cup plain flour
    3 cups vegetable stock
    1/4 cup, plus 2 tbsp heavy cream
    1/2 cup cream cheese
    2 slices white bread, crusts removed
    None None Parsley, to garnish
Preparation
    Heat 2 tbsp butter in a saucepan, add the onion and saute for 2-3 mins. Add the mushrooms and continue to cook for 4-5 mins, stirring. Season then sprinkle with flour and cook briefly.
    Gradually stir in the vegetable stock and cream and continue to simmer, stirring, until the sauce thickens. Stir in the cream cheese.
    Slice the bread into triangles. Heat 1 tbsp butter in a frying pan, add the bread and fry for 2-3 mins on each side.
    Divide the soup between 4 bowls and sprinkle with parsley leaves. Serve with the fried bread triangles.
