Beat the egg in a bowl.
Add both cans of corn.
Add sugar and flour and mix well.
In baking dish, melt the stick of butter and pour on top of corn mixture.
Crumble enough Ritz crackers on top to cover and form a crusty top.
Bake at 350\u00b0 for about 45 minutes.

African Peanut Butter Chicken With Corn Bread

Brown chicken in the oil in a large pot.Add garlic and onions.Sprinkle on all seasonings and brown sugar.
Stir well, cover and let simmer on medium for 5 minutes.
Add tomatoes,paste, and peanut butter.

Simmer on low for 40 minutes. Add wine during last 10 minutes of cooking.

Serve on rice (I use wild brown rice blend but jasmine is great too!)

Place in buttered casserole dish.
Mix corn, egg, cracker crumbs and onions. Pour over broccoli and dot with butter.
Bake at 350\u00b0 for 30 to 40 minutes.
This recipe can be doubled, tripled, etc., just as long as you have a pan big enough to cook it in.
Increase baking time when making additional recipes.

Corn Chowder

Fry the bacon until browned and crisp, about 5 minutes.
Set bacon aside, spoon off and discard all but 2 tablespoons of the drippings.
Add the green onions, thyme leaves, salt, and pepper. Cook til softened.
Sprinkle flour over and stir to make a roux.
Add the half and half, broth, and potatoes. Simmer gently until the potatoes are tender, about 15 minutes. (They help thicken the chowder.).
Add the corn and cook for 5 minutes. Stir in the reserved bacon.
