Cut the sweet potatoes into small cubes, let set in cold water for 10 minutes.
Heat non-stick skillet to medium high heat with 1 teaspoon olive oil. Toss potato cubes in the self rising flour to coat, then add to hot skillet. Cover and cook, turning often to prevent burning. Add 2nd teaspoon of olive oil about 10 minutes into cooking.
After potatoes are softened add the two table spoons of dark molasses and stir potatoes to coat. Let molasses slightly caramelize and serve hot.

Peel and slice fresh sweet potatoes lengthwise and place in heated iron frying pan with 1/4 inch grease. Fry until golden brown and soft in the middle when poked with a fork. Goes good with sausage or bacon.
Wash and slice thin 4 sweet potatoes.
Fry sausage and save grease.
Add margarine to Teflon frypan, then add sliced potatoes. Sprinkle with brown sugar. Sprinkle with cinnamon and white sugar. Cook slowly and turn gently. Add small amount of sausage grease as potatoes cook.
Take your oil and butter and heat slightly.
Add your sweet potatoes and your sugar.
Let fry until sugar begins to melt.
Do not stir yet and do not let burn.
Add 2 tablespoons of water and stir slightly.

Add 1 drop vanilla flavoring (optional).
Slice raw peeled sweet potatoes 1/2-inch thick.
Place in heavy skillet that has margarine, melted.
Sprinkle sugar on potatoes.
Cook on low heat, turning often.
When tender, remove to serving dish.

Cut into 3/4-inch strips.
Dry potatoes on paper towel.
Fry in deep oil until golden brown.
Drain on paper towels.
Peel sweet potatoes.
Slice potatoes thinly.
Put potatoes and brown sugar in hot oil.
Turn potatoes often.
Fry for 30 to 40 minutes on medium heat.
Peel and slice sweet potatoes.
Place in large skillet and add oil (enough to cover bottom of pan).
Add sugar on top as it is cooking (may need to add more).
Let cook on medium for approximately 25-30 minutes or less till potatoes are soft and turning brown.
