Melt red madrilene and gelatin together; add a few drops of red coloring. Oil a mold or 2 small ones.
Pour a little madrilene mixture into mold and let set.
Add pate mixture and keep in center.
Pour remaining madrilene over and around; chill.
Keeps well; do not freeze.
Good for cocktail party, served with plain crackers.
Heat consomme and add gelatin until dissolved.
Pour half into bowl or mold and refrigerate.
Beat pate and cheese with seasonings and brandy.
Press pate mixture on top of jellied consomme.
Cover with remaining consomme.
Return to refrigerator to jelly.
Unmold and garnish with chopped parsley and/or sieved egg yolk.
Blend pate ingredients together until combined.
Line an 8\" cake pan with plastic wrap and fill pan with cheese mixture. Cover with plastic wrap and chill 4 hours.
NOTE: Can be frozen at this point. Defrost at room temperature before proceeding.
Unmold pate on a large platter. Pour chutney over, then sprinkle with peanuts, onions, and coconut.
Serve with crackers. ENJOY!

Heat a skillet over medium heat. Finely chop the mushrooms in a food processor. Add oil and butter to the skillet, then shallots and mushroom bits. Season with ground thyme, salt and pepper and saute until the mushrooms are deep brown, about 6 minutes. Deglaze pan with the sherry.
Transfer this mushroom duxelles to a serving dish and place on a platter alongside the storebought pate. Garnish tray with sliced baguette, cornichons, capers and a sprinkle of chopped parsley.
Enjoy bread rounds with a slather of pate topped with mushrooms.
