To make the Cuban Roast Pork: Mash the garlic
Heat up Panini Grill.
Slice each cuban roll in half and spread a thin layer of butter on outside bottom and top of each sandwich.
Separate the meats and cheeses into 6 portions. Layer bottom half with Ham, Roast Pork, Turkey Breast, and Swiss Cheese.
Top with sliced pickles.
Spread mustard on inside top of cuban roll.
Press down sandwich.
Place on heated grill and smoosh down so sandwich remains even.
Cook until flattened and golden brown.
Makes 6 Cuban Sandwiches.

Using a favorite pie crust recipe, cut rolled pie crust into large circles with a large cookie cutter or rim of a coffee can. Place 1/4 cup of any canned fruit pie filling in center of each circle.
Moisten edges of the dough with water and fold dough over to make a semi-circle, pressing edges together with fork tines. Bake in hot oven for about 30 minutes at 350\u00b0, until golden. Sprinkle with 10x sugar, if desired.
Makes 8 pies.

Cuban Pie Crust Directions:
Sift
Cut 4 (1-1/2-inch) circles out of your choice of lunch meat (use small glass if you don't have a cutter that is that small and cut around it), then cut 4 (1-1/4-inch) stars out of your choice of cheese.
Top each cracker with 1 lunch meat circle and 1 cheese star or place in container and ship off in lunch box.

Cut Cuban bread into 6 8-inch
Slice bread down middle lengthwise. Layer ingredients to cover bottom half of bread in the following order: ham, pork, salami, cheese, and pickles. Spread mustard on top half of bread. cover bottom half and slice sandwich diagonally. Sandwich may be heated in oven or served at room temperature. If Cuban bread is not available, you may use French bread (baguette type) or Italian bread.
Stack cheese and lunch meat, alternating each layer.
Trim around edges to make square.
Place toothpicks through all slices, about 3/4-inch apart.
Slice between toothpicks.
Make Rich Tea Biscuit dough, adding more milk to make a drop biscuit dough. Spread the dough 1/2 inch deep in an oblong 9 x 12-inch baking dish. Peel and pare apples; cut in eighths. Press apple slices into top of dough very close together. (It won't hurt if more than a layer thick.) Dot with butter or oleo. Mix cinnamon and sugar together.
Sprinkle over apples. Bake at 350\u00b0 for 30 minutes or until done. Serve warm or cold with Lemon Sauce (recipe follows).

If you have a food processor: Add the orange juice, cilantro leaves, mint leaves, and smashed (not minced) garlic cloves, and pulse until everything is finely chopped. Add this mixture to a ziplock bag, along with the rest of the oil, zest, lime juice, oregano, and cumin.
If you don't have a food processor: In a large ziplock bag, combine olive oil, orange zest, orange juice, lime juice, chopped cilantro, chopped mint, minced garlic, oregano, and cumin. Shake it around a bit to mix it up, then add the pork shoulder.
