To assemble ONE sandwich; layer 1 slice of toast
For the Chipotle Mayo: Combine ingredients in small mixing bowl; set aside.
For the BLT: Lightly toast sourdough bread slices.
Spread Chipotle Mayo over both slices of bread. Layer lettuce, then tomato slices (2 per sandwich) and finally bacon slices on top of bread. Place remaining slice of sourdough on top to complete the sandwich. Repeat for second sandwich.
Fry bacon 6-10 minutes or until desired crispiness (turn often with tongs).
Put the cooked bacon onto paper towels to dry.
Meanwhile, slice one bagel in half and toast the halves (until desired 'toastiness').
Spread both sides of bagel with mayo.
Layer one side of bagel with five slices of the bacon and cover with half the shredded lettuce. Top with a couple slices of tomato.
Sprinkle salt and pepper on other side of bagel and sandwich together.
Make the other bagel the same way.
Cook bacon until crispy, then drain on paper towels.
Toast the 8 slices of bread.
Spread 1 tablespoon mayo on each slice of toasted bread. (More or less, to taste).
Add 1 slice of lettuce to 4 pieces of mayo-spreaded toast.
Add 2 slices of tomato on top of lettuce.
Arrange 3 slices of bacon evenly on top of tomato. (Break bacon slices in half to fit, if needed.).
Add 1 slice of lettuce on top of bacon.
Put the remaining 4 pieces of mayo-spreaded toast on top to finish the sandwiches.
