Light Brown Cajun Roux: In a black iron
Slice each chicken breast in half crosswise. Cut each slice in half diagonally. Sprinkle with Cajun seasoning. Spray with no stick cooking spray.
Preheat the grill to medium-high. Spray corn with no stick cooking spray. Grill corn for 8 mins, turning frequently, until tender. Grill chicken for 2-3 mins each side, until cooked through.
Remove kernels from corn. Mix with tomato, cucumber, oil and lemon juice in large bowl. Season. Serve chicken with corn salsa and cilantro.
Slice washed potatoes.
Place in bowl.
Mix in 2 tablespoons Cajun seasoning.
Stir in unbeaten egg whites, coating the potatoes.
Place mixture in sprayed pan(s) and bake at 350\u00b0.
Turn potatoes with a spatula every 15 minutes until done.
This gives them a crunchy, browned exterior.
Cooking time is 45 to 60 minutes.
