Whisk together sugar and next seven ingredients thoroughly, plus onion if using.

Put the bag of coleslaw mix in a bowl and cover with water. Let it sit for 1 hour. This will allow the coleslaw to be extra crispy. After the hour drain and let sit until quite dry. Or use a salad spinner or put between paper towels.
In a different bowl mix the sour cream, mayonnaise, and mustard. Add salt & pepper to taste.

To make tofu:
Preheat oven to 350 degrees. Coat baking sheet with cooking spray.
Toss tofu with sesame seeds and oil in a large bowl until well coated.
Spread cubes in a single layer on prepared baking sheet and bake for 30 to 35 minutes, until browned. Turn occasionally and let cool when done.
