Heat oil and garlic in a large saucepan. Add onion, black pepper, and red pepper to pan. Saute until soft and golden.
Add bratwurst to pan and brown. Remove bratwurst from pan.
Add flour to pan & stir to absorb oil.
Slowly add beer to pan & stir well. Return bratwurst to pan. Cover and simmer 30 min, stirring occasionally.
Slowy stir in sour cream. Make sure to gradually add sour cream so that it does not curdle.
Heat through.
Serve over hot buttered noodles.

Put meat, french fried onions, and stuffing in bowl. Mix eggs, ketchup, and ranch dressing together separately (easier this way), then dump over other ingredients (meat, stuffing, onions). Brown sausages and onion slices in oil in a wide skillet. The sausages do not need to be cooked through at this stage, you just want to get some color on them.
Add sauerkraut, sugar, and beer. Stir as best you can around the sausages.
Bring to a slow boil, reduce heat, and simmer until sausages are cooked through.
Spread buns or rolls with mustard, and add a sausage and a bit of the sauerkraut and onion to each.

Once the bratwurst are cooked add the onions and remaining beer to the pan. Cook over medium heat until the beer has reduced to a thicker sauce with the onions.
