Thank goodness we were biking our way through the San Juan Islands when we found this recipe for a local delicacy at the tourist office in Nanaimo on Vancouver Island.

Prepare Cookie Filling: In large mixing bowl
Combine oatmeal and milk in microwave safe bowl. Give it a quick stir to make sure oats are covered. Make sure the bowl is wide or deep enough so the oatmeal does not overflow (I've had this happen). Put it into the microwave for 3 minutes.
Remove bowl from microwave. Add apple sauce, raisins, cinnamon and splenda (optional). Mix it all together. The oatmeal may be stiff until the apple sauce is incorporated.
Place oatmeal, salt, syrup, canola oil and apple butter in a large bowl.
Pour 1 1/2 cups boiling water over mixture and set aside.
Soften yeast in 1/3 cup warm water.

Stir in flour until your hands must replace your spoon as mixers.
Knead dough for 10 minutes, adding more flour if it is too sticky.
