Cook brown rice in water for about 50 minutes.
Will yield about 5 to 6 cups cooked rice.
This may be done the day before and then kept in refrigerator.
Saute onions and diced Anaheim chili in margarine on stove or in the microwave about 2 minutes. Mix rice (cooked), onions and chilies with all remaining ingredients.
Bake in a 9 x 13-inch casserole at 350\u00b0 for 45 minutes to 1 hour until bubbly hot.
Serve immediately.

Roast Anaheim chili pepper on medium to medium/high heat in a pan on the stove.
Chop all peppers, tomatoes, cilantro, and onions.
Mix all ingredients thoroughly together in bowl.

Green Chili Crema:.
In a medium
arlic, onion, corn, carrots, and Anaheim chili.
Cook for 3 minutes
In a food processor, process the onion to a fine dice and transfer to a small bowl and combine with lime juice. Let stand for 10 minutes.
Meanwhile, in the food processor, working in batches, process the tomatoes to a medium dice. Transfer to a bowl.
Process the jalapenos, anaheim chili, cilantro and garlic to a fine dice. Transfer to the bowl with the tomatoes.
Stir in the onion mixture. Season with salt, pepper, and cayenne.
Remove all seeds from pepper and chop in small pieces.
Mix all ingredients together in a heavy 4 gallon pot.
Cook slowly, stirring frequently for 4 to 5 hours.
Jar sauce up in hot, sterilized jars and lids.
Great for baked fish, beef or pork.
Roast jalapeno pepper & anaheim chili pepper on a grill pan

Brown beef making sure to prevent large clumps of hamburger.
When hamburger is still pink add onion and salt to taste.
Drain beef and add to 4qrt crockpot.
Add tomato sauce.
Drain and add diced tomatoes and corn.
Add in chili powder to taste (I use mostly chili powder but add a couple dashes of hot chili powder.).
Add the rest of the ingredients; mix well.
Cook on low to medium for ~8hrs.
