Anaheim Chili Rice - cooking recipe

Ingredients
    1 1/2 c. brown rice
    3 3/4 c. water
    1 1/2 to 2 c. chopped onions
    1 large Anaheim chili
    1/4 c. margarine
    1 pt. sour cream
    1/2 pt. cottage cheese
    2 c. grated sharp or medium Cheddar cheese
    salt to taste
Preparation
    Cook brown rice in water for about 50 minutes.
    Will yield about 5 to 6 cups cooked rice.
    This may be done the day before and then kept in refrigerator.
    Saute onions and diced Anaheim chili in margarine on stove or in the microwave about 2 minutes. Mix rice (cooked), onions and chilies with all remaining ingredients.
    Bake in a 9 x 13-inch casserole at 350\u00b0 for 45 minutes to 1 hour until bubbly hot.
    Serve immediately.
