Anaheim Chili Sauce - cooking recipe

Ingredients
    1 peck Anaheim chili pepper
    6 lb. diced onion
    1 qt. sugar
    2 gal. Hunt's ketchup
    1 1/2 lb. diced garlic
    2 c. apple cider vinegar
    2 Tbsp. Zatarain's Creole seasoning
Preparation
    Remove all seeds from pepper and chop in small pieces.
    Mix all ingredients together in a heavy 4 gallon pot.
    Cook slowly, stirring frequently for 4 to 5 hours.
    Jar sauce up in hot, sterilized jars and lids.
    Great for baked fish, beef or pork.
