Ingredients

18 tbsp margarine, at room temperature
1 2/3 cups powdered sugar, sifted
1 tsp vanilla extract
2 1/3 cups flour
2/3 cup rice flour
1/3 cup cornmeal
2 tbsp low-fat milk
1 oz walnuts, finely chopped
2 tsp ground cinnamon
2 tbsp sugar
Preparation

For the dough, beat margarine, powdered sugar and vanilla with an electric mixer until light and fluffy. Sift flours into mixture and fold to combine. Add milk and mix well. Halve dough on a lightly floured surface and knead each half until smooth. Roll into logs and wrap in parchment paper. Chill 1 hour.
Preheat oven to 375\u00b0F. Line 2 baking sheets with parchment paper. Cut dough into 1/3 inch slices. Place on trays, 1 inch apart. Combine walnuts, cinnamon and sugar and sprinkle on cookies. Bake 15-20 mins, until golden.
