Mini Party Pizzas - cooking recipe
Ingredients

3 tbsp fresh yeast, crumbled or 1 1/2 tbsp active dry yeast
1-2 tsp sugar
7-8 tbsp olive oil
3 1/2 cups all-purpose flour
8.75 oz mixed ground meat (e.g., beef, pork, and veal)
1 bunch spring onions, sliced into rings, white and green parts kept separate
1 tbsp tomato paste
1 - 15 oz tomato sauce
1 - 7 oz can tuna, drained
1/2 lb hard, waxy cheese, such as Gouda, grated
1/2 lb cherry tomatoes, quartered
1/3 cup pine nuts
1/2 bunch fresh parsley, finely chopped
None None fresh basil, to garnish
Preparation

Dissolve yeast with 1 tsp sugar in 1 cup lukewarm water. Set aside. Mix 3 tbsp oil, flour and a pinch of salt. Add yeast mixture and knead with the dough hook of a mixer until smooth. Cover and put in a warm place to proof for about 45 mins.
For the meat sauce, heat 1 tbsp oil in a pan and brown ground meat, breaking it up until crumbly. Add white parts of spring onions then add tomato paste and cook for 1 min. Add 1/2 the tomato sauce and season, adding a little sugar to taste. Simmer for 5 mins then set aside to cool.
Preheat oven to 400\u00b0F. Line a baking sheet with parchment paper. Knead dough on a floured work surface, divide into 22 pieces then roll each piece into a 3 1/2 inch disc. Transfer pizzas to prepared pan.
For the tuna pizzas, cover 1/2 the pizzas with remaining tomato sauce, tuna, 1/2 the remaining spring onions and 1/2 the cheese. For the meat pizzas, spread meat sauce over remaining pizzas, add cherry tomatoes and sprinkle with pine nuts and remaining cheese. Bake for 15 mins. Meanwhile, mix chopped parsley with remaining oil, season then set aside. Remove pizzas from oven, drizzle tuna pizzas with parsley oil and add remaining green spring onions. Garnish meat pizzas with basil. Serve.
