1 None vanilla bean
1/3 cup sugar
4 None wide strips lemon peel
1 tbsp lemon juice
2 None blood oranges, peeled and sliced crosswise
2 None oranges, peeled and sliced crosswise
3 cups Greek-style yohurt
1/4 cup loosely packed fresh mint leaves
Preparation

Split the vanilla bean in half lengthwise and scrape the seeds into a small saucepan. Add the vanilla bean to the pan with the sugar, 1/2 cup water and lemon peel; bring to a boil. Reduce the heat to low; simmer for 6 mins or until the syrup has thickened slightly. Cool; discard the vanilla bean. Stir in the lemon juice.
Combine the orange slices and sugar syrup in a medium bowl.
Spoon the yogurt into four 1 1/4-cup serving glasses. Top with oranges, syrup and lemon peel. Serve topped with mint.
