Apple Pecan Bread - cooking recipe

2 1/2 cups flour
2 tsp baking powder
1/2 tsp ground cinnamon
1 cup granulated sugar
2 None Granny Smith apples, peeled, cored and grated
1 cup coarsely chopped pecans, toasted
8 tbsp (1 stick) butter, melted
2 None eggs, lightly beaten
1 tsp vanilla extract

4 tbsp (1/2 stick) butter
1/4 cup packed brown sugar
2 None Granny Smith apples, cored and thinly sliced
Preparation

Preheat the oven to 350\u00b0F. Lightly grease and line an 8 x 4-inch loaf pan with parchment paper.
Sift flour, baking powder and cinnamon into a large bowl. Stir in the sugar, apples and pecans.
Combine butter, eggs and vanilla in a medium bowl. Fold into dry ingredients, until combined. Pour mixture into prepared pan.
Bake 55-60 mins, until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; completely on wire rack.
Meanwhile, for the caramelized apple, melt butter and brown sugar in a medium skillet. Add apple slices. Stir on low heat until caramelized and tender. Serve with the warm cake.
