Vine-Ripened Tomatoes And Goat Cheese In Walnut Dressing - cooking recipe

Ingredients
    8 None vine-ripened tomatoes (3 1/3 lbs), thickly sliced
    1 log (5 oz) goat cheese, thickly sliced
    1/4 cup olive oil
    1 clove garlic, crushed
    1 1/2 tbsp raspberry vinegar
    2 tsp Dijon mustard
    2 tsp coarsely chopped fresh thyme
    2 tsp sugar
    1/4 cup chopped coarsely walnuts, toasted
Preparation
    Place one slice of tomato on each serving plate and top with a slice of cheese.
    For the dressing, whisk remaining ingredients, except nuts, in a medium bowl.
    Repeat the layering, sprinkling nuts and dressing between layers. Serve.
