Cheesy Zucchini Bread - cooking recipe

Ingredients
    13 oz zucchini (about 2 medium), coarsely grated
    3 slices bacon, finely chopped (optional)
    1 None large onion, finely chopped
    1 1/4 cup self-rising flour
    5 None large eggs, lightly beaten
    1 cup shredded cheese, such as cheddar or Monterey Jack
    1/4 cup rice bran oil
    1/2 None tomato, sliced
    None None Sliced smoked salmon or ham, to serve
Preparation
    Preheat oven to 400\u00b0F. Lightly grease a 9-by-5-inch loaf pan. Line base and two long sides with parchment.
    Combine all ingredients except tomato in a bowl and season to taste. Spoon into prepared pan and top with tomato slices. Bake for 40 mins, until a skewer inserted comes out clean. Remove from oven and leave to rest in pan for 5 mins. Invert onto a wire rack to cool slightly.
    Serve warm or cooled with smoked salmon or ham.
