Thai Green Curry With Fish And Noodles - cooking recipe

Ingredients
    2 tbsp vegetable oil
    2 cloves garlic, peeled and crushed
    1 piece ginger, about 3/4 inch, peeled and grated
    1 stalk lemongrass, stem finely chopped
    2 None small green chili peppers, deseeded and finely chopped
    2 tsp ground cumin
    2 tsp ground coriander
    1 tsp shrimp paste
    14 oz can coconut milk
    1/2 cup fish stock
    2 tbsp fish sauce
    1 tbsp brown sugar
    2/3 lb firm white boneless fish, sliced
    1 None red pepper, seeded and sliced
    1/4 lb green beans, trimmed
    1 None lime, juiced
    None None cooked rice noodles, to serve
    None None Thai basil leaves, to serve
Preparation
    Heat the oil in a frying pan over medium heat. Saute the garlic, ginger, lemongrass and chili pepper 1-2 mins, until tender. Stir in the spices and shrimp paste and cook, stirring, 1-2 mins, until fragrant.
    Stir in the coconut milk, stock, fish sauce and sugar. Simmer, then add the fish, pepper and green beans. Remove from heat and cover. Set aside 8-10 mins, until fish is just cooked through. Stir in the lime juice. Sprinkle with Thai basil leaves and serve with rice noodles.
