Ingredients
-
2 cups all-purpose flour, plus extra for sprinkling
9 tbsp butter, diced
2 1/2 cups confectioners' sugar
1 None egg
2-3 drops vanilla extract
3-4 tbsp grenadine syrup
Preparation
-
In a large bowl, rub the flour and butter together using your hands. Stir in 1 cup confectioners' sugar, then the egg and vanilla. Knead with your hands until the mixture forms a smooth dough. Shape the dough into a disc, wrap in plastic wrap and chill for 30 mins.
Preheat the oven to 325\u00b0F. Line 1-2 baking sheets with baking parchment. Roll out the dough on a lightly floured work surface to 3/8-inch thickness. Using a 2-inch heart-shaped cookie cutter, cut out hearts, then use a smaller heart-shaped cutter to cut out the centers. Reroll the dough as necessary and cut out more hearts. Arrange the hearts on the baking sheets. Bake for 12-15 mins until golden.
Remove the cookies to wire racks and cool completely. Mix the grenadine with the remaining 1 1/2 cups confectioners' sugar to form a thick icing. If too thick, mix in 1-2 tbsp water. Spread the icing over the cookies and let stand until set.
