Tofu And Vegetable Stir-Fry - cooking recipe
Ingredients

2 tbsp vegetable oil
1 clove garlic, finely sliced
3/4 inch fresh ginger, peeled, finely sliced
1 bunch baby carrots, trimmed, halved lengthwise
1 head broccoli, cut into small florets
11.25 oz marinated tofu pieces
1/3 cup vegetable stock or water
2 tbsp sweet soy sauce
1 tbsp light soy sauce
2 None spring onions, sliced
1/3 cup roasted peanuts, roughly chopped
None None cooked brown rice, to serve
None None lime wedges, to serve
Preparation

Heat oil in a wok or large frying pan over high heat. Stir-fry garlic and ginger for 20 seconds, or until golden. Add vegetables and tofu. Stir-fry for 1-2 mins. Add stock, sweet soy sauce and light soy sauce. Simmer for 1-2 mins, or until vegetables are just tender. Remove from heat. Add spring onions. Sprinkle with nuts and serve with brown rice and lime wedges.
