Blueberry Banana Bread - cooking recipe
Ingredients

2 c. whole wheat flour
1 c. all-purpose flour
1 1/3 c. sugar
4 tsp. baking powder
1/2 tsp. salt
1 1/2 c. quick cooking rolled oats
2/3 c. oil
4 eggs, slightly beaten
2 c. mashed bananas (4 bananas)
2 c. fresh or frozen blueberries
Preparation

Mix together flours, sugar, baking powder and salt.
Stir in oats.
Add oil, eggs, bananas and blueberries (if using frozen blueberries, do not thaw).
Stir just until mixed.
Pour batter into two oiled 9 x 5 x 3-inch loaf pans and bake at 350\u00b0 for approximately 60 minutes or until toothpick inserted in the center comes out clean.
Cool 10 minutes.
Remove from pans.
Wrap and refrigerate several hours before slicing.
Yields 2 loaves, 16 slices each.
Serving size:
1 slice.
