Zucchini Quiche - cooking recipe

Ingredients
    1 c. corn muffin mix
    3 c. sliced zucchini
    1 medium onion, chopped
    1/2 c. grated Parmesan cheese
    1/3 c. cooking oil
    4 eggs, well beaten
    salt and pepper to taste
    1 can cream of mushroom soup
Preparation
    Mix all ingredients together.
    Pour into a well-greased pan and bake at 350\u00b0 for 45 minutes.
    Can be frozen and baked when needed.
    Also nice served with fresh veggies.
