Orange Spiked Zucchini And Carrots - cooking recipe

Ingredients
    1 lb. zucchini, cut into 1/4-inch slices
    1 pkg. (10 oz.) frozen, sliced carrots
    1 c. sweetened orange juice
    1 stalk celery, finely chopped
    2 Tbsp. chopped onion
    salt and pepper to taste
Preparation
    Combine all ingredients in nonstick saucepan.
    Cover and simmer 10 to 12 minutes until zucchini is tender.
    Uncover and simmer until most of the liquid has evaporated.
