Zucchini Bread - cooking recipe

Ingredients
    3 eggs
    2 c. sugar
    1 c. vegetable oil
    1 Tbsp. vanilla
    2 c. grated zucchini, peeled and seeds removed
    3 c. flour
    1 tsp. cinnamon
    1/4 tsp. baking powder
    1 tsp. baking soda
    1 tsp. salt
    1 tsp. grated lemon rind or 1 tsp. juice
    1 c. finely chopped pecans (optional)
Preparation
    Beat eggs until light and frothy.
    Add sugar, oil and vanilla. Mix until thick.
    Add zucchini.
    Mix.
    Add remaining ingredients. Mix until smooth.
    Bake in 2 greased and floured loaf pans at 350\u00b0 for 1 hour.
    Freezes well.
