Zippy Zucchini - cooking recipe

Ingredients
    4 small zucchini, thinly sliced
    1 c. biscuit mix
    1/2 onion, chopped
    1/2 c. Parmesan cheese
    1 tsp. salt
    1/2 c. vegetable oil
    4 eggs, beaten
Preparation
    Combine all ingredients in a large bowl and mix well. Spread evenly in a greased 13 x 9-inch baking dish. Bake in a preheated 350\u00b0 oven for 30 to 40 minutes. Sprinkle top with extra Parmesan cheese after it is removed from the oven.
