Banana Nut Bread - cooking recipe

2 1/2 c. sifted all-purpose flour
3 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda
1/2 c. (1 stick) butter or margarine
1 c. sugar
3 eggs
4 c. mashed bananas
1/4 c. wheat germ
1/2 c. finely chopped walnuts
1/2 c. raisins, chopped
Preparation

Preheat oven to 325\u00b0.
Sift flour, baking powder, salt and baking soda onto wax paper.
Line and grease 9 x 5 x 3-inch loaf pan with wax paper.
Beat butter, sugar and eggs in a large bowl until light and fluffy.
Stir in banana.
Stir in flour mixture, fold in wheat germ, walnuts and raisins.
Pour into prepared pan. Bake at 325\u00b0 for 1 hour and 20 minutes or until a wooden pick inserted near the center comes out clean.
Cool in pan on a wire rack for 10 minutes.
Loosen around edges with a knife, turn out onto a wire rack.
Peel off wax paper.
Let cool completely.
Wrap in aluminum foil and refrigerate overnight.
