Zucchini Bread - cooking recipe
Ingredients

4 eggs
2 c. sugar
1 c. vegetable oil
3 1/2 c. flour
1 tsp. salt
1 1/2 tsp. baking soda
1 tsp. cinnamon
3/4 tsp. baking powder
2 c. unpeeled zucchini, grated
1 c. raisins (optional)
1 c. walnuts (optional)
1 1/2 tsp. vanilla
Preparation

Beat eggs very well.
Add sugar and continue beating until well blended.
Add oil and beat a few minutes.
Sift flour, salt, soda, baking powder and cinnamon together.
Add all sifted ingredients with zucchini, starting and ending with dry ingredients.
Stir in walnuts, raisins and vanilla.
Pour into 2 greased and floured pans (9 x 5-inch loaf pans) and bake at 350\u00b0 for 1 hour. Check after 50 minutes.
