Zucchini Bread - cooking recipe

Ingredients
    2 1/2 c. zucchini, shredded
    3 eggs
    1 c. salad oil
    1 1/2 c. sugar
    1 tsp. vanilla
    3 c. flour
    1 tsp. baking soda
    1/2 tsp. baking powder
    1 tsp. cinnamon
    1/2 c. nuts
    1/2 c. raisins, soaked in 1/4 c. hot water or 1/2 c. chopped dates
Preparation
    Shred zucchini and mix with eggs, oil, sugar and vanilla; blend well.
    Sift dry ingredients.
    Add to zucchini mixture.
    Stir only to moisten.
    Fold in nuts and raisins or dates.
    Pour into floured and greased 9 x 5 x 2-inch loaf pans.
    Bake at 350\u00b0 for 50 to 60 minutes or until loaf tests done.
    Makes 2 loaves.
