Zucchini Nut Bread - cooking recipe

Ingredients
    3 eggs, well beaten
    1 c. salad oil
    2 c. sugar
    2 c. zucchini, grated or shredded
    2 tsp. vanilla
    3 c. flour
    1 tsp. soda
    1/2 tsp. baking powder
    1 tsp. salt
    1 tsp. cinnamon
    1/2 c. nuts, chopped
Preparation
    In a 3 quart mixing bowl, beat eggs well.
    Add oil, sugar, zucchini and vanilla; mix well.
    Sift and measure flour.
    Add to it the baking soda, baking powder, salt and cinnamon.
    Add this to the batter and mix until well blended.
    Then stir in chopped nuts. Pour the batter into two greased and floured loaf pans and bake at 325\u00b0 for about 1 hour or until done.
    These freeze well.
