Zucchini Bread - cooking recipe

Ingredients
    3 eggs
    2 c. sugar
    1 c. vegetable oil
    2 c. raw grated, peeled zucchini
    3 c. flour (can use 1 c. whole wheat flour)
    3 tsp. vanilla
    1 tsp. salt
    1 tsp. baking soda
    1/4 tsp. baking powder
    3 tsp. cinnamon
    1 c. chopped walnuts
Preparation
    Beat eggs until light and foamy.
    Add sugar, oil, zucchini and vanilla and mix well but lightly.
    Combine the flour, salt, soda, baking powder and cinnamon.
    Add to zucchini-egg mixture.
    Stir until well blended; add nuts and pour into two 9 x 5 x 3-inch loaf pans.
    Bake in preheated oven at 350\u00b0 for 1 hour.
    Cool on a rack. Makes 2 loaves.
