Crispy Zucchini Spears - cooking recipe
Ingredients

3 medium zucchini
1/3 c. enriched cornmeal
1/3 c. all-purpose flour
1/4 c. grated Parmesan cheese
1/2 Tbsp. onion powder
1/4 tsp. salt
1/8 tsp. seasoned pepper
1 egg, beaten
2 Tbsp. milk
3 Tbsp. margarine, or butter, melted
Preparation

Heat oven to 450\u00b0.
Lightly grease a 13 x 9-inch glass baking dish.
Cut off ends of zucchini and slice each in quarters, lengthwise to make 12 spears.
Combine dry ingredients in small bowl.
Combine egg and milk in shallow bowl.
Roll each spear in cornmeal mixture.
Dip into egg mixture and again into cornmeal to coat thoroughly.
Arrange in baking dish.
Drizzle with melted butter.
Bake 15 to 20 minutes.
