Zucchini Bread - cooking recipe
Ingredients

1 c. canola oil
3 eggs, slightly beaten
2 tsp. vanilla
2 c. sugar
2 c. zucchini (unpeeled), grated
1 tsp. baking powder
3 c. flour
1 tsp. salt
1 tsp. soda
1 tsp. cinnamon
1 c. chopped walnuts
Preparation

Combine the first 5 ingredients in large bowl, stirring well after each addition.
In separate bowl, stir together the dry ingredients, except walnuts, and add all at once to zucchini mixture.
Stir well.
Add walnuts.
Pour into 2 greased and floured 9 x 5-inch loaf pans.
Bake at 325\u00b0 for 75 to 90 minutes. Flip out of pans immediately; cool on wire racks.
You should cool completely before slicing, but I always have to have a slice warm with butter!
