Skillet Zucchini And Vegetables - cooking recipe
Ingredients

2 medium onions, sliced
2 cloves garlic, minced
1/4 c. olive oil
2 c. canned tomatoes
2 medium zucchini, sliced 3/8-inch
1/2 tsp. salt and sugar
pepper to taste
2 Tbsp. parsley, minced
Preparation

In large skillet on medium heat, saute onion and garlic in oil until tender.
Break up tomatoes.
Put in skillet.
Add zucchini, salt, sugar and pepper.
Cook uncovered 10 minutes or until liquid is reduced and zucchini is tender-crisp.
Sprinkle with parsley. Stir in.
