Zucchini Bread Or Muffins - cooking recipe

3 c. flour
1 tsp. each: baking powder, soda and salt
1 Tbsp. cinnamon
2 c. = 1 large zucchini, shredded (with peel on)
2 eggs
1 1/2 c. sugar
1/2 c. honey
1 c. oil
1 Tbsp. vanilla
Preparation

Preheat oven to 350\u00b0. Grease 2 loaf pans or 18 muffin tins. Mix dry ingredients together and set aside. Grate zucchini, peel and seeds, to = 2 cups. Mix oil, sugar, honey and eggs together. Beat until pale yellow and creamy. Add vanilla, zucchini and dry ingredients together. Pour into desired pans. Bake. Cool on racks. Serves many. Can freeze. Good way to use up all that summer zucchini and share with others.
