Ingredients

1 c. butter or oleo
1 c. sugar
2 eggs
2 tsp. grated lemon rind
3 c. cake flour
1/2 tsp. soda
1/2 tsp. salt
Preparation

Cream butter and sugar until light and fluffy.
Add 1 egg and 1 egg yolk; beat well.
Add lemon rind.
Sift flour with soda and salt.
Gradually add to creamed mixture, working in flour with hands as dough stiffens.
Wrap in wax paper.
Chill thoroughly. Roll out part of dough at a time to 1/8-inch thickness on a lightly floured board or pastry cloth.
(Refrigerate remainder.) Cut in desired shapes with small cookie cutters.
Dilute remaining egg white with a very small amount of water.
Brush on cookies.
Decorate as desired.
Bake at 400\u00b0 for about 8 minutes or until lightly browned.
Yields about 5 dozen.
