Zucchini Bread - cooking recipe

Ingredients
    3 eggs
    2 c. sugar
    1 c. oil
    3 1/4 c. self-rising flour
    3 tsp. vanilla
    1 tsp. baking soda
    2 c. grated zucchini
    1 c. chopped nuts
Preparation
    Mix eggs, oil and sugar.
    Add only 1 cup of the flour, add baking soda.
    Beat well.
    Stir in remaining 2 1/4 cups of flour, grated zucchini, vanilla and nuts.
    Pour mixture into regular sized greased bread loaf pans.
    Bake at 350\u00b0 for 1 hour.
    Test with toothpick.
    Makes 2 loaves.
