Zucchini Boats - cooking recipe

Ingredients
    4 medium zucchini
    1 lb. sausage (sage optional)
    1/2 c. chopped onion
    1/2 c. grated Parmesan cheese
    1/2 tsp. thyme
    1/4 tsp. garlic powder
    1 c. cracker crumbs
    1 egg
    1 tsp. salt
    paprika
Preparation
    Boil whole, unpeeled zucchini for 8 minutes.
    Slice lengthwise and scoop out middle.
    Mash or blend with browned sausage and onion.
    Add cheese, spices, cracker crumbs and egg.
    Refill the zucchini with mixture and top with more Parmesan cheese.
    Sprinkle with paprika.
    Bake at 350\u00b0 for 35 minutes.
