Carrot Bread - cooking recipe
Ingredients

1 c. whole wheat pastry flour
1 tsp. baking powder
1/2 tsp. baking soda
2 tsp. cinnamon
1/4 tsp. salt
1/2 c. raisins
3 Tbsp. apple juice concentrate
1 egg
1/4 c. vegetable oil
1 tsp. vanilla
1 ripe banana, sliced
1 c. finely grated carrots
Preparation

Stir together dry ingredients in large bowl.
Heat raisins and apple juice concentrate in small saucepan.
Boil 3 minutes or until raisins become soft.
Pour juice and raisins in blender and process until smooth.
Add egg, vegetable oil, vanilla and banana. Blend until smooth.
Add blender mixture to dry ingredients and stir well.
Stir in carrots.
Pour into greased loaf pan and bake at 350\u00b0 for 45 minutes.
Makes 12 servings.
