Mock Coconut Cookies - cooking recipe

Ingredients
    1/2 c. sauerkraut
    2 tsp. coconut extract
    3 pkg. Sweet 'N Low
    2/3 c. powdered skim milk
Preparation
    Soak sauerkraut in clear water for approximately 5 minutes. Drain and rinse under running water for several minutes.
    Drain. In small pan, place kraut, 1/2 cup water and 1 or 2 packages sweetener.
    Bring to a boil, simmer until kraut is almost dry, stirring often.
    Remove from heat.
    Stir in milk, sweetener and extract.
    Drop by spoonful onto a Teflon cookie sheet.
    Bake at 350\u00b0 for 10 to 15 minutes, until golden brown.
