Zucchini Relish - cooking recipe

Ingredients
    10 c. ground, unpared zucchini
    4 c. ground onions
    5 Tbsp. salt
    2 1/4 c. white vinegar
    4 1/2 c. sugar
    1 Tbsp. nutmeg
    1 Tbsp. dry mustard
    1 Tbsp. turmeric
    1 Tbsp. cornstarch
    1/2 tsp. pepper
    2 tsp. celery salt
    1 green pepper, chopped
    1 red pepper, chopped
Preparation
    Combine zucchini, onions and salt; mix well.
    Let set overnight.
    Drain.
    Rinse with cold water; drain again.
    Combine drained vegetables, vinegar, sugar, spices, cornstarch and pepper; mix well.
    Bring to boiling; lower heat and simmer (uncovered) for 30 minutes or until desired consistency.
    Stir occasionally.
    Seal in jars.
    Process in boiling water bath for 5 minutes.
    Makes 6 to 8 pints.
