Zucchini-Tomato Italienne - cooking recipe

Ingredients
    1 large onion, sliced
    4 cloves garlic, minced
    4 medium zucchini, sliced
    4 large tomatoes, peeled and chopped
    1 c. Ricotta cheese
    1 c. Mozzarella cheese, shredded
    15 or more basil leaves, chopped
    grated Parmesan
    ground pepper
    oregano
    4 Tbsp. olive oil
    Italian bread crumbs
Preparation
    In large skillet, heat olive oil.
    Add garlic and onion and cook about 4 minutes.
    Add zucchini and cook about 5 minutes, stirring often.
    Add tomatoes, basil, oregano and pepper (to taste) and cook until zucchini is soft (about 10 minutes).
    Turn off heat.
    Add about 1/4 cup bread crumbs.
    If very watery, stir to thicken.
